Lunch Box: Super Hero Sandwich

What kid wouldn't want to eat a sandwich fit for a superhero?

The Italian ingredients in this hero sandwich make for some powerfully good flavor. The kids probably won't be able to bend steel after eating this lunch, but they'll definitely be supercharged with enough energy to get them through the rest of the day!


What's for Lunch

A make-ahead sandwich by the recipe's design, it's the perfect brown bag lunch--it actually tastes better when you make it the night before. And if you get a long enough loaf of bread, you'll only have to assemble one sandwich to produce several family members' lunches. Now who's the superhero? Serve this sandwich with some Creamy Spiced Coleslaw, one or two Italian Cookies, and water or low-fat milk. (Please note the suggestions for a healthier option below--the fat content and calories can be greatly reduced by following a few easy tips.) 


Lunch Box Logic

  • Make it lighter. Instead of going heavy on the salami and ham, opt to make the sandwich all about the turkey, with maybe a couple slices of ham for flavor. Reduce the amount of olive oil and use low-fat mozzarella. Use a whole grain loaf of bread rather than white.
  • Make ahead.Ah, the beauty of this meal--the sandwich, coleslaw, and cookies can all be made the night before. Just pack it all up in the morning and you're done!
  • Make it pack an even healthier punch. Add more veggies! A sandwich is the perfect place to hide red and green peppers, extra lettuce, and other nutrient- and vitamin-rich vegetables.
