Oklahoma

Shaped something like a meat cleaver poised above Texas, the Sooner State was homesteaded in a novel way. In 1889, a land rush opened up Oklahoma Country (the so-called Unassigned Lands) to homesteading. Not everyone played by the rules. Some snuck across the starting line before the signal was given. These cheaters came to be called “Sooners.” After Oklahoma became a state in 1907, this pejorative became a term of waggish self-regard for unabashed Oklahomans. The name Oklahoma is a combination of two Choctaw words “okla,” which means “people,” and homma, which means “red.” In the Choctaw language, Oklahoma Territory meant “Indian Territory.” Oklahoma is the only state in the Union that has an official state meal. It’s quite a spread, a comprehensive tour of southern specialties, consisting of barbecue pork, biscuits with sausage and gravy, chicken fried steak, cornbread, black-eyed peas, grits, corn, fried okra, squash, strawberries, and pecan pie.

About me:
I have been married for almost 16 years. I have two sons, ages twelve and fifteen who are picky but love seafood! I also have a daughter who is still a baby.......we'll see how she fares with pickiness!! I don't consider myself an expert cook even though people love my cooking. I'm good at making things up (experimenting) but I don't like my own cooking.

Blonde Brownies I

Reviewed on Oct. 15, 2008 by ILove2Ck
Delicious sweet treat. This was very rich. This was almost like a giant pan cookie instead of a "brownie". I used light brown sugar and only sifted my flour the first time as I used a triple sifter and didn't want to lose any ingredients in the layers of mesh putting it through again. I did not use the nuts. I couldn't keep the guys out of these once they had the first bite. Thanks, these are great!

Quick Garlic Toast

Reviewed on Oct. 14, 2008 by ILove2Ck
This is great toast for what it is. Nothing fancy, no artisan breads or fancy butters, but still a good standard garlic toast. Very economical too! I was out of parmesan and used garlic powder instead of salt but we still liked this.

Basic Baked Spaghetti

Reviewed on Oct. 14, 2008 by ILove2Ck
This was a pretty good dish. I used a homemade spaghetti sauce which is really what makes this dish. I had to substitute bowtie pasta for the spaghetti and a mozzarella/cheddar mix. This is a good starting point. As the name states this is "basic" baked spaghetti.
