The smallest of the Scandinavian countries, Denmark is considered the geographical crossroads between Europe and the far north. Flat and fertile, with one large peninsula and 450 islands surrounding Copenhagen, Denmark is an enchanting mix of pastoral farmland and bustling towns. Danes love to eat, and eating well is an essential ingredient in Danish culture. As a nation of farmers, seafarers, and merchants, Danish tables are traditionally laden with various pork products, cheeses, delectable butter, salamis, potatoes (introduced from France in 1720), pickled herring, smoked eel, assorted rye and wholegrain breads, simple berry desserts, cakes, and puddings. Despite their proximity to the sea, Danes are infatuated with meat, particularly pork and bacon. Beer and snapps are also imperative. In fact, Denmark is the largest beer-drinking nation after Germany. Buttery, flaky Danish pastries and smorrebrod or open-faced sandwiches are among Denmark’s gifts to gastronomy.

Apple, Carrot, Or Zucchini Cake

I made this for a family dessert because it was fast and I had all the ingredients handy, I made it with apples and had it warm with ice-cream.. and later on its own cooled. Was ok but not great. didn't get any compliments with this one that I usually get :( If I make it again It will be carrot version with cream cheese frosting..

Chicken Enchiladas I

Amazing! I still can't get over how good these are. The store/package bought ones don't hold near to these. We coudn't resist making them the next week for a dinner party.
