Thai Steamed Mussels

This is an excellent way to serve mussels. I've only ever done the safe tomato or butter based broth even though we enjoy hot thai food. I cut back on the curry only because I didnt want it seriously hot but will take it up to full heat next time. Delicious, and will make again.

Mediterranean Lemon Chicken

Very yummy indeed! Didn't change a thing except that I used skinless bone in chicken breasts. Turned out nice and moist and loved all of the flavours mixed together! I did let my chicken sit in the mixture for about an hour before baking them, only because I was waiting for hubby to be on his way home. Thanks for the quick but delicious recipe!

Slow Cooker Barbecue Ribs

I made these as directed using 'extra hot' Asian chili sauce since the recipe did not specify and woohooo! Spicey! For the sake of my children I made a second batch of sauce without chili sauce and removed the ribs, shaking off the excess, to the new batch and let them go for another hour. They were perfect for us and they still had a very nice bite! I recommend you try this recipe making sure you use a sweeter chili sauce if your not wanting the heat! Thanks.

Vegan Sun-Dried Tomato Pesto

I used raw almonds instead of pine nuts and toasted them. I did sprinkle a about a tablespoon of parmesean cheese in the end and squeezed some lemon juice on top.

Supreme Strawberry Topping

Walnut-Cheese Spinach Salad

This was delicious! Used frozen raspberries, as the freash ones didn't look too great, and it worked out fine. Also used mixed baby greens instead of the spinach, because that was what was freshest at the store. Be sure to toast the nuts, as the flavour is much better. Thanks for a super recipe.

Crustless Spinach Quiche

Easy to make and pretty flavourful, especially if you use shredded cheese with herbs and garlic added. Nice with sliced tomatoes on the side. Would be good to take cold for lunch as well (just be careful of spinach caught in your teeth!). Thanks for the recipe!

Pear Scones

These scones were very good. Just enough sweetness and the pears are flavorful. I peeled and chopped 3 pears to yield the 1 cup called for in the recipe.

Lentil Soup

This is very good lentil soup (which I've never eaten before but I was curious and hubby has to eat a high fibre diet). The only changes I made was to use less lentils as I like a soupy soup and I used chicken broth instead of water. I'll make this again for sure.
