Peas with Mushrooms

This is really good. I sauteed the onions w/ fresh mushrooms untill tender, then added fresh chopped garlic. Not to make so many dishes and to keep the peas from getting overcooked/mushy and to maintain the vibrant green, I added them frozen to the sauteed mushroom mixture and stirred for a few minutes untill warmed through and cooked to a tender crisp. Thx, will make again.

French Breakfast Muffins

These are ok. They are small muffins and I filled the muffin pans 3/4 full. For the final step, I didn't dip them into butter, instead I painted it on w/ a pastry brush and just sprinkled on the cinnamon/sugar. This way I used less of each ingredient. They are not that sweet, so do add the topping as it needs it. It's also not that hearty of a muffin. Accually, it's more like some kind of cake (maybe a pound cake or coffee cake?)than a muffin. THX.

A-Number-1 Banana Cake

This is a nice simple recipe, perfect for using up those bananas. Added some chocolate chips for fun, isn't going to last long in my household. Thanks for a keeper. ;)

Cream of Broccoli Soup III

Pecan Pie Bars II

Mmmm. I used butter pecan cake mix instead of yellow and I believe this made them even more d-lish! Yes, the bottom crust was difficult to spread and pat into the pan but it did work. I allowed mine to cool some before I put the filling on top. The filling wasn't done in 35 minutes. As every oven temp differs, mine took 45 minutes until the center no longer jiggled when I shook the pan. I took the advice of others and allowed it to cool then I put them in the fridge over night to harden some so it can cut easier as they are gooey/creamy in the midddle (yummy). A very good peacan bar. THX

Bacon Roasted Chicken

WHOA! This is excellent! The smell of chicken & bacon, roasted in beef broth is heavenly! The taste as well. It was very moist and the breast had really absorbed the bacon flavour which was very nice and very pleasing to our taste buds..YUM. THX.

Northern Ontario Partridge (Ruffed Grouse)

I made this back in October on a grouse hunting trip. Before cooking the meat I "bled" it overnight to get rid of the game-y taste (refrigerate in salted water overnight). We also got as much meat as possible off the bird, and cut the "dark meat" pieces small, keeping the breasts whole. I sauteed all the meat in the skillet and threw it all into a roasting pan. After it was cooked through I removed the breasts, and put the roaster right onto the stove top to make my gravy in there. I left those little pieces of "dark" meat in the roaster and OMG did it ever make the gravy nice. I can't wait to make this again. To Terri: dry partridge is almost inevitable. It doesn't take very long to cook and even slight overcooking dries it out. Baste frequently while it roasts and try not to overcook. I cook it till it's so close to done it might as well be, take it out of the oven and let it rest, tented, in a warm spot. The temp will continue to rise which should get it just right. Use chicken temp guidelines. Good luck :)

Sauteed Grouse with Peach-Balsamic Sauce

I meant to review this sooner but plain forgot! I went on a hunting trip with my male friend and cooked this recipe with the grouse he shot. First of all we took the meat off the bones and "bled" it to get rid of the game-y taste (just soak in salted water overnight in the fridge). When I cooked this the next night and let him taste a piece before dinner he said "Oh my God that's the best thing I've ever eaten." In other words, we loved this recipe! It compliments the game bird perfectly. I cooked it exactly like it's written, and I honestly can't wait to make it again.

Smothered Green Beans

I drained most of the bacon fat except for 1-2 Tsp. I cooked my beans seperatly and then added it to the drained cooked bacon, garlic, onion, tossed to coat and it was very good. THX
